Chicken red curry with bamboo shoots

Ingredients

  • 1 package(300g) of  bamboo shoot sliced (sour), rinsed, drained

  • 150g chicken strips

  • 3 cup of coconut milk

  • 2 tsp sugar

  • 2 tsp fish sauce

  • 1/2 stem sweet basil

  • 4 kaffir lime leaves

  • 3 chili peppers, seeded and cut into strip

  • 2 tbsp red curry paste

 ​

Directions

  1. Cut chicken into strips. Set aside.

  2. In a large skillet, add 1 cup of coconut milk and set heat to low and stir for 10 minutes.

  3. Add red curry paste and stir-fry until the mixture is fragrant.

  4. Increase the heat to high, add the chicken strips and stir-fry for 3 minutes or until the chicken is almost cooked.

  5. Add drained bamboo shoots, the remaining coconut milk, kaffir lime leaves, chili peppers, and seasonings then stir well. Bring to the boil, then reduce the heat to low and simmer for 10 minutes. Remove from the heat and stir in the basil leaves. Done!
